Awesome Banana Bread

This is a super yummy tea-time (or any other time of the day) treat. It's also so simple to make!

perfect with a glass of hot chocolate..

Bananas at Vic Market were going cheap at $1/kg so I went a little crazy with the bananas. I ended up baking two batches of banana breads in 2 days. The first recipe contained raisins and chopped chocolates but it doesn't beat the classic ol' plain banana bread. After doing a comparison among a few banana bread recipe, I improvised and made an excellent batch out of the recipe below: (do try!!)

Banana Bread

2 mashed large bananas

¾ cup (165g) caster sugar (I use half caster, half brown)

2 eggs

¼ cup (60ml) extra light olive oil

¼ cup (60ml) milk

2/3 cup (100g) self-raising flour

2/3 cup (100g) wholemeal self-raising flour (I tried to add more wholemeal than plain flour)

Chopped walnuts

1. Preheat oven to 170 degrees, line loaf pan with baking paper

2. Mix sugar with mashed bananas. I used a large wooden spoon.

3. Add oil, eggs and milk. Mix

4. Add the other ingredients. Mix

5. Sprinkle walnuts on the top and bake for 1 hour.
